Apple Dutch Baby

Apple Dutch Baby-1This was one of those breakfasts I started making when I tried to find something healthy my toddler would eat.  I like the simple ingredient list with lots of fruit.  It’s pretty easy to throw together and only bakes for 15 minutes.  It tastes so good that everyone else loves it too!

Apple Dutch Baby serves 4

6 Tbs butter

2 tsp cinnamon

1/4 c. brown sugar

3 apples

4 eggs

1 c. flour

1 c. milk

PREHEAT oven to 425˚.

IN a 10-12″ skillet, melt butter and stir in cinnamon and sugar.  (It’s already smelling wonderful!!!)Apple Dutch Baby-2

CUT the apples into thin slices and add them to the skillet.  Stir well to coat the apples with the cinnamon and sugar. Apple Dutch Baby-3

COOK for ~5 minutes until translucent and then put the skillet into the preheated oven while you mix up the batter.

IN a blender, combine the eggs and flour until smooth.

ADD milk and blend well.Apple Dutch Baby-4

BAKE, uncovered, until the pancake is puffy and golden – about 15 minutes.

CUT into wedges and dust with powdered sugar if desired.
