This was one of those breakfasts I started making when I tried to find something healthy my toddler would eat. I like the simple ingredient list with lots of fruit. It’s pretty easy to throw together and only bakes for 15 minutes. It tastes so good that everyone else loves it too!
Apple Dutch Baby serves 4
6 Tbs butter
2 tsp cinnamon
1/4 c. brown sugar
3 apples
4 eggs
1 c. flour
1 c. milk
PREHEAT oven to 425˚.
IN a 10-12″ skillet, melt butter and stir in cinnamon and sugar. (It’s already smelling wonderful!!!)
CUT the apples into thin slices and add them to the skillet. Stir well to coat the apples with the cinnamon and sugar.
COOK for ~5 minutes until translucent and then put the skillet into the preheated oven while you mix up the batter.
IN a blender, combine the eggs and flour until smooth.
POUR batter over the apples in the pan.
BAKE, uncovered, until the pancake is puffy and golden – about 15 minutes.
CUT into wedges and dust with powdered sugar if desired.
Leftovers are great reheated too . . . if you can manage to save any!
