Apple Cookies for Breakfast

We have a new favorite in our weekly breakfast lineup.Apple Cookies-4

Apple Cookies!

Okay, they’re not really cookies at all.  In fact, I’m trying to get away from us eating as much sugary breads in the morning.  Not that I don’t love a good cinnamon roll or slice of banana bread . . . but I want to incorporate more fruit into our mornings.

Apple cookies are really simple to make and involve just a few ingredients.  Here they are:

Apple Cookies-3

Apple Breakfast Cookies

1-2 apples, cored and sliced

Peanut butter (I really don’t measure this – just scoop it out of the jar!)

Shredded coconut

Mini chocolate chips


-After coring and slicing the apples, blot one side dry with a towel or paper towel.

Apple Cookies

-Spread peanut butter on the dried side.

-Sprinkle with coconut and chocolate chips.

-Enjoy a delicious and filling breakfast.  🙂

  1. Try sprinkling plain oatmeal on top too. Super yummy & one of my favorite snacks! Of course, it’s even better with Nutella instead of peanut butter, but that’s just more sugar. So good to see you this summer :).
