We have a new favorite in our weekly breakfast lineup.
Apple Cookies!
Okay, they’re not really cookies at all. In fact, I’m trying to get away from us eating as much sugary breads in the morning. Not that I don’t love a good cinnamon roll or slice of banana bread . . . but I want to incorporate more fruit into our mornings.
Apple cookies are really simple to make and involve just a few ingredients. Here they are:
Apple Breakfast Cookies
1-2 apples, cored and sliced
Peanut butter (I really don’t measure this – just scoop it out of the jar!)
Shredded coconut
Mini chocolate chips
-After coring and slicing the apples, blot one side dry with a towel or paper towel.
-Spread peanut butter on the dried side.
-Sprinkle with coconut and chocolate chips.
-Enjoy a delicious and filling breakfast. 🙂

Try sprinkling plain oatmeal on top too. Super yummy & one of my favorite snacks! Of course, it’s even better with Nutella instead of peanut butter, but that’s just more sugar. So good to see you this summer :).
